Ingredients for Mexican meatloaf:
- 2 pounds floor pork
- 2 teaspoons minced garlic
- 2 teaspoons dried cilantro leaves
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- Dash warm pepper sauce or Tabasco (elective)
- 1 tablespoon taco seasoning (I used my recipe for home made taco seasoning)
- half of cup chopped inexperienced onion or normal onion
- half cup chopped pink or inexperienced candy peppers
- 1 cup frozen corn
- 2 (10 ounce) cans Rotel tomatoes with green chilis (nicely tired)
- 1 egg
- 2 cups beaten tortilla chips or corn chips, divided (I used tostado chips)

- half cup salsa
- 1/2 cup crushed tortilla chips
- half of cup shredded Mexican cheese I used a Finely Shredded Fiesta Blend that could be a combination of Monterey Jack, Cheddar, Queso Quesadilla and Asadero Cheese that came from Walmart
Instructions
