Mexican Meatloaf Breakfast

This Mexican meatloaf is a completely versatile recipe as you could add or subtract substances you like or don’t like.  You could make half this recipe if you need on the grounds that this makes plenty.  It keeps properly for several days in the refrigerator and makes appropriate sandwiches bloodless or may be reheated in the oven or microwave.  Try it with the spices you like in case you don’t like the ones inside the authentic recipe I even have organized right here.  Make it as hot or slight as you like by using adjusting the substances, too.

Ingredients for Mexican meatloaf:

  • 2 pounds floor pork
  • 2 teaspoons minced garlic
  • 2 teaspoons dried cilantro leaves
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • Dash warm pepper sauce or Tabasco (elective)
  • 1 tablespoon taco seasoning (I used my recipe for home made taco seasoning)
  • half of cup chopped inexperienced onion or normal onion
  • half cup chopped pink or inexperienced candy peppers
  • 1 cup frozen corn
  • 2 (10 ounce) cans Rotel tomatoes with green chilis (nicely tired)
  • 1 egg
  • 2 cups beaten tortilla chips or corn chips, divided (I used tostado chips)

Topping for Mexican meatloaf:
   
  • half cup salsa 
  • 1/2 cup crushed tortilla chips 
  • half of cup shredded Mexican cheese I used a Finely Shredded Fiesta Blend that could be a combination of Monterey Jack, Cheddar, Queso Quesadilla and Asadero Cheese that came from Walmart

Instructions

  1. Mix collectively in a huge blending bowl the ground red meat with the minced garlic, cilantro, pepper, salt, hot sauce and taco seasoning. 
  2. Fold within the onions, peppers, corn, tired tomatoes, egg and 1 1/2 cups of the crushed tortilla chips.   
  3. Form into a loaf and region in baking dish (I used a nine x 13).  Bake in preheated 350 diploma oven, uncovered, for 30 minutes.  Remove and add the salsa, overwhelmed tortilla chips and cheese to the pinnacle of the meatloaf.  Raise the oven heat to 375 and bake for 35 greater minutes uncovered.  Makes eight to ten servings.
