Potato Skin Bites Breakfast

Ingredients

  • 3 russet potatoes, scrubbed smooth
  • 2 tbsp. Olive oil
  • kosher salt
  • Freshly floor black pepper
  • Pinch cayenne pepper
  • 1 tsp. Garlic powder
  • 6 slices bacon, cooked and crumbled
  • 1 1/2 c. Shredded Cheddar
  • three inexperienced onions, thinly sliced
  • Sour cream, for serving
Directions
  1. Preheat oven to 400°. Slice potatoes into 1/2" coins.
  2. In a big bowl, toss the potato rounds in olive oil. Season with salt, pepper, cayenne and garlic powder, and toss until lightly lined. Place in a unmarried layer on a big baking sheet. Bake for 30-forty mins, till lightly browned and tender, flipping halfway through.
  3. Top every potato spherical with cheese and bacon. Broil until melty, approximately 2 mins.
  4. Dollop bitter cream onto each potato and garnish with green onions.
