Spinach Artichoke Spaghetti Squash Recipe Breakfast

A more healthy way to serve a favourite dip, this Spinach Artichoke Spaghetti Squash Recipe has squash blended with spinach, artichokes, and a creamy cheese sauce.

Ingredients

  •     1 spaghetti squash, seeded
  •     3 teaspoons greater virgin olive oil
  •     three/4 cup chopped onion
  •     salt and pepper
  •     three cloves garlic, minced
  •     1/2 cup mild sour cream
  •     three oz. Much less fat cream cheese
  •     three/4 cup grated parmesan, divided
  •     three cups packed toddler spinach
  •     1 1/four cups canned artichoke hearts, chopped
  •     3/four cup shredded mozzarella cheese
  •     chopped fresh parsley

Instructions

  1. Place the spaghetti squash in a microwave secure dish, reduce aspect up.  Pour about 1/2 an inch of water inside the dish, then cover with plastic wrap and microwave until smooth, about 10 mins.  Remove and permit cool barely, then with a fork, scrape up the strings from the squash.
  2. Meanwhile, in a pan, warmness the olive oil over medium heat.  Add the onion and cook till gentle, 5-eight minutes.  Season with salt and pepper, then upload the garlic and cook until aromatic, about 60 seconds.
