Beef & Bean Enchiladas Breakfast

Beef and Bean Enchiladas - Breakfast is rapid and clean !! Corn tortillas full of pork and cheese and crowned with enchilada sauce. Beef, onions, refried beans, seasoned tacos, enchilada sauce, corn tortillas and cheddar cheese. Can make early and freeze for later!

Ingredients:

  •     1-half lb floor pork
  •     1 Tbsp dried minced onion flakes
  •     1 (16-oz) can refried beans
  •     1 (1-ounces) package taco seasoning
  •     3 (10-ounces) cans enchilada sauce
  •     12 (6-inch) corn tortillas
  •     3 cups shredded cheddar cheese
Commands:
  1. reheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray.
  2. In a big skillet, brown floor beef. Drain fats. Return meat to skillet. Stir in onion flakes, refried beans and taco seasoning.  Cook over low heat until thoroughly heated. Set aside. 
  3. Heat enchilada sauce in saucepan over medium heat. Pour one cup of sauce in bottom of 9x13-inch pan.
  4. Wrap tortillas in a wet paper towel. Microwave for forty five-60 seconds, until tortillas are gentle. Brush tortillas with enchilada sauce on both aspects. Spoon approximately 1/3 cup meat aggregate down center of every tortilla. Top with one tablespoon of cheese. Roll up tortilla and place seam aspect down in 9x13-inch pan. Repeat with closing tortillas. Pour last sauce over tortillas. Top with final cheese.
  5. Bake for 15-20 minutes, until cheese is melted and enchiladas are heated thoroughly.
